01 / ABOUT THE PLACE

About this place

A bowl lands with the rich, savory aroma of soy-based tare and melted pork lard rising from beneath a tangle of house-made thick noodles. The centerpiece at Menya Brighton is its aburamen, built around springy, toothsome noodles that offer serious chew and grip. Mixing vigorously from the base coats each strand in the deep sauce, while minced raw garlic brings sharp punch and diced onions cut through with crisp sweetness. Diners can specify their preferred amounts of garlic and onion when handing over the meal ticket, tailoring the balance to their liking.

For a more generous bowl, the Marutoku Aburamen adds seasoned soft-boiled egg, extra pork slices, and nori sheets. The kitchen applies the same house-made noodles to other preparations as well, including a spicy kara aburamen, standard soup-based ramen, and tsukemen dipping noodles. Portions range from small (150g) and regular (200g) to medium (300g) and large (400g), allowing you to fit the order to your appetite.

A traditional way to wrap up the bowl is to introduce rice into whatever sauce and toppings remain. Ordering a small scoop or a bowl of rice to stir through the lingering sauce ensures none of the concentrated seasoning goes to waste.

Business hours run on Saturdays from 11:30 to 15:00, and on weekdays from 17:00 to 22:00. The dining room consists solely of counter seating, and lines frequently form before the doors unlock. Payment is cash only and reservations are not accepted, so allowing extra time for your visit is advisable.
